Some Resolutions

Well, after a whole morning of hurling my guts out every 45 minutes I'm wide awake at 9pm! Its not very often that I am still this awake at this time of night. Being pregnant sure takes a lot out of a women.

I promised myself I would write in this blog as much as I could and I think I need to make a couple New Years Resolutions, starting with this blog.

Being pregnant and thinking about the future is pretty overwhelming. Its hard to believe that in under 6 months we will be welcoming someone else into our family. The best way for me to express myself sometimes is through words... even if nobody else reads it, I still feel better if I can just type and get stuff off my chest. I need to do it more often, even if its only 3-5 times a week. I need to do it more. I was getting so frustrated that we were keeping this whole pregnancy a secret until Christmas, even though I was well past the scary part in the first trimester. So, New Years Resolution #1: Write more.. write often.. quantity produces quality right!

Something that has taken a beating is my eating habits. Being sick all day with morning sickness and having no appetite as taken a tole on my body, and I can tell. I lost weight, which isn't a good thing when you're pregnant. My doctor hasn't said anything yet, but being 15 weeks pregnant and only gaining 2lbs can't be good. I should have gained at least 5lbs by now. So, for New Years Resolution #2: Eat healthy.. eat more.. eat good hearty food and think of the baby! (I'm also going to throw in take your vitamins under this one, even though I've been taking them religiously already.)

Sometimes in life, we get distracted from the things we love. Lets face it, we get busy, we get distracted, its part of life. There are lots of things I love in life, but my family always comes first. That means both Daniel, his parents, and of course my parents, brother and sister. I want them to be involved in my life, with my baby and I want my baby to learn from them. I need to take the time out of my day or week to talk to them, to visit, to have fun. So, for New Years Resolution #3: Spend time with family and friends.. visit, call, text, whatever.. just take the time to include them in my life and my future baby's life. Dan and I are lucky in that all our family and friends are close to us. I need to include them more, and I admit I'm horrible for going home to visit my family because we always seem to have things going on. The main reason I am doctoring close to my parents is so I can make appointments for Fridays and take the whole day off to go home to them and visit them after my appointment!

Also, I love being crafty. One of the presents I got for my bridal shower is sadly still in the box. My new sewing machine. I also love scrap booking, and I need to get into it more. I signed up for an online digital scrapbook maker and have barely used it! I also love drawing/painting/knitting/cooking/baking.. the list goes on. I never seem to find the time to do these things. So, for New Years Resolution #4: Take the time to do the things I love. When the baby comes I won't have time to do these things, and I know that.. so now more than ever I need to take the time to do these things.

Of course there are more things I need to do in life, but this is a good start for now.

A Little Bit O' News

I have had something on my mind for the past couple weeks and I've kept it a secret. It is also most of the reason why I haven't been around much blogging. I find blogging to be relaxing and a great way to express myself. This whole keeping things secret just doesn't work very well for me!

So whats my news you ask? Well ok, here it is..

We are expecting!

Yup thats right, around June 24th 2012 we will be welcoming a little baby into our family! By now most of our families know so its safe to put it out here! I can't believe how far along we are already! Man has time flew by! Here are some updates for previous weeks:

Week 4:
After a weekend at the farm, and getting up at night to pee (which is super odd) I took a pregnancy test, or 4.. all came back positive!

Week 5:
Patiently waiting for my doctor appointment.. so excited! Still feeling good..
Week 6:
Doctor appointment to confirm pregnancy and then to get some blood work. Morning sickness definitely started this week!
Week 7-8:
We went on a vacation to the Virgin Islands for Daniel's work.. We were with some other couples and that we knew from the company. I got sick of coming up with excuses on why I wasn't drinking and actually was sick in general and missed out on a couple of the functions. So we had to tell the people we were with and made them keep it a secret! Also, Daniel's grandfather passed away while we were gone and after his funeral Daniel's sister cornered me and finally figured out that we are expecting. Also was told to keep it a secret!
Week 9:
Morning sickness got way out of hand and we ended up in the hospital... got some meds from the doctor there so hopefully feeling better!
Had our first Prenatal Visit. Daniel came along just for fun, but had to leave halfway through to go to a meeting. Louise went through our medical history, all the bloodwork I had done a month ago, did a head to toe physical. Checked on my cold to make sure it was under control.. Took blood pressure, and all that other fun stuff. Then she went to find a heartbeat. She had warned me a couple times that it was way too early to find it, so I wasn't to worried when she couldn't find it. She did find the sound of the blood flow into the uterus and it was going strong. All in all it was a great checkup!

Week 10:
Stayed at my sisters place in the city. Did some maternity shopping. I was really dissapointed that the store wasn't honoring the Black Friday Sale they had signs and posters for in the store. What did I buy you ask? I bought 9 items (sale was buy two get one free). A pair of really cute jeans, black dress pants, a dressy top, 3 long sleeve shirts and 3 t-shirts that are oh so soft and comfortable! Also, on Sunday was the Christmas Story play my mom had bought tickets for. We had made supper reservations and I wasn't feeling super great and ended up throwing it all up and just eating a bit of ice cream.. yum. Still feeling super sick and not much of an appetite.
Week 11:
Anything carbs seems to be sitting well in my stomach.. carbs and salty. I've been eating lots of cinnamon toast and it seems to stay down ok. Still feeling super sick but not much else going on.. hope it goes away soon.

Week 12:
Definitely feeling like the morning sickness is starting to subside. By 9 or 10am I am feeling good enough to down a bagel with cheese, skittles and some crackers! Definitely need to work on the diet a bit!
Week 13:
Had our second prenatal visit. My N.P. mentioned that I'm measuring big (top of my uterus to the top of my pelvic bone) at a whopping 16 cm. After about 5 minutes of searching she found the baby hiding behind my pelvic bone! Heart beat was super strong, about 158-160bpm, and the bloodflow can be heard across my whole uterus! Still hoping that we only have one in there! Won't have a ultrasound until the first week into February.

Week 14:
Christmas - present.. everyone now knows! I'm feeling much better, haven't been sick for like 5 days!

So thats it for now! Christmas was amazing as usual. I got absolutely spoiled with a breadmaker, cookbooks, new pizza pans, a deep fryer, a new george forman grill and so so much more! I also got the most comfortable pajama pants in the world, and a new fleece sweater that I've pretty much lived in all weekend!

I will have to write more of an update tomorrow!


Overnight Cinnamon Buns

Good morning! I have really been slacking.. but something is going on and I will have to fill you in later...

We had some company this weekend, and we decided to do a fondue party Friday night. We had three different fondues. One cheese, one oil, and one a chinese broth. To dip in each we had pork, chicken, steak, shrimp, veggies and then a jalepeno bread. It turned out amazing, everyone had so much fun.

I made some cinnamon buns Saturday and thought I would post the recipe. They are made with a cake mix, and left overnight in the fridge. They turn out soo good everytime even though I somehow seem to screw up the recipe differently everytime.

Overnight Cinnamon Buns

Prep Time: 1 1/2 hours
Cook Time: 30 minutes

Ingredients (24 servings (2 9x13 pans))
  • 3 cups warm water, plus 1 tbsp sugar
  • 2 pkg traditional yeast
  • 1 pkg Duncan Hines White Cake Mix
  • 5 1/2 cups flour (or more)
  • 2 eggs
  • margarine, brown sugar, cinnamon
  • 1 cup raisins (optional)
  • 1 cup margarine
  • 2 cups brown sugar
  • 1 cup whipping cream
Dissolve yeast in warm water. Add cake mix and eggs. Beat well. Add flour to make a soft dough. Knead for a couple of minutes. Let rise until doubled in size in a greased bowl (about 1 hour).
While the dough is rising make the sauce. Heat all ingredients in a saucepan until everything is mixed together. Divide evenly and spread in two 9x13 inch pans.The sauce should be cooled before you place the rolled dough into it.
Punch down the dough and divide in half. Roll each half into a rectangle. On each rectangle, spread thick layers of margarine, brown sugar and cinnamon. Sprinkle the raisins on if you're using them. Roll up like a jelly roll. Slice each into 12 buns and place into the pans. Put into the fridge overnight or for 8-12 hours. The buns won't rise much.. don't worry they rise when baking!
In the morning pull out the pans and bake at 350F for 30 minutes. (I find I usually end up baking a bit longer until they are browned on top)

Pumpkin Muffins

Halloween is almost here, and its starting to get cool and I crave pumpkin now more than ever! These muffins are the perfect fix with my morning cup of coffee.

I meant to make these last night but ended up being falling asleep in front of the tv after supper.. oops. Good thing there are only a couple ingredients and I was able to throw these together this morning! Super quick, easy and delicious!

pumpkin muffins 

Spiced Pumpkin Muffins
Makes 12 muffins

1 box of golden cake mix
1 (14oz) can of pumpkin
1 egg white
1/4 tsp each cinnamon, nutmeg, cloves

Mix thoroughly and scoop into muffin cups. Bake at 350F for 20-25 mins.

Good morning everyone, and happy Friday! This week seemed to just drag on forever! I have a long list of "To Do" projects this weekend. That list goes a little something like this;
  1. Finish painting the nursery - yellow and white stripes. First coat of white on so far last night.
  2. Go through the storage room downstairs and organize it! - put away wedding presents and make room for a bed in the room.
  3. Take the bags of leaves to the farm - and maybe the couch from the corner upstairs.
  4. CLEAN! - sweep/wash floors, dust, vaccuum, clean bathroom...
  5. Groceries
  6. Make sure to get lots of rest :)
Shouldn't take me too long to do all of the above. My main concern is the couch in the corner upstairs. Right now there are two couches, a table, and some shelves.. need to clean it out and make more room for my desk thats coming. I can't wait to have a little home office area!

When we moved into the house it originally had 3 bedrooms on the main floor, plus the kitchen, a huge dining room, living room and a little corner off the living room that is useless space. In the basement there are another 2 bedrooms, a living room and a laundry room. Upstairs, we turned one of the bedrooms into Daniel's home office, the other bedroom is currently being painted into a nursery, and then our bedroom. The kitchen, dining room and living room have remained the same and the corner space is now going to be a home office (as soon as my desk and new computer come in!). Hoping the couch is not too big and can stay there, but I'm doubting it. The 2 bedrooms downstairs will be a spare room, a spare room plus storage room. Whew.. lots of house remodeling in the past year.. hopefully after this we are done!

I'm thinking about making homemade pizza for supper tonight, something quick and yummy! Both Daniel and I haven't been sleeping very well this week and we are both looking forward to a quiet and cheap weekend at home!

Pepper Steak

This is one of those dishes that is just an absolute comfort food for me! When Daniel is lucky its made ontop of spaghetti, and if I'm lucky I serve it with yummy rice to soak up the sauce!

Pepper Steak
Serves 4

1lb of round steak cut into stripes
2-3 peppers cut into stripes
1 cup of mushrooms, sliced
1 onion, sliced
pepper flakes
1 tsp garlic
1/2 tsp ginger

1 can of beef broth
1/4 cup soya sauce
3 tbsp sugar
2 tbsp cornstarch
1/2 cup water

In a deep frying pan or wok, fry the stripes of meat over a high heat in some oil. When cooked, set aside on a plate. Turn down the heat to a medium-low and add in the veggies. Cook until soft.

Meanwhile in a saucepan mix up all the ingredients for the sauce except cornstarch and water which should be mixed in a seperate bowl. Once the sauce is boiling add the cornstarch mixture.

When the veggies are done, add the meat back in and sprinkle in the pepper flakes, ginger and garlic. Pour over the sauce and mix until everything is coated and looks yummy!
Serve with rice or spaghetti.


Weekend Recap on a Wednesday!

Good Morning all my beautiful readers! Sorry I haven't wrote in awhile, I've been feeling a bit down lately. Just tired, and blah.. Not sure what thats all about.

My weekend was amazing! I spent a good couple hours at the craft show, and was definitely inspired to do a little bit of crafting of my own! I just need to find some time and energy to do it. I am thinking about sewing some baby blocks for a friend that is expecting, to go along with the blanket I'm knitting. The tutorial is here for the blocks. Aren't they the cutest thing ever? I was thinking about sewing a letter to spell B-A-B-Y on each of them.

I picked up a couple super neat items at the craft show. Wish I would have picked up more though.. oh well. There is a craft show coming up in November in the next town over, I will definitely have to hit it up!

This is a premade scrapbook I bought for my Aunt. She loves scrapbooking and I thought this would be perfect for her! I'm going to fill it with some fun recipes and maybe add a couple pictures.


This is a life savor for me! I just hope my mother in law thinks the same thing. You cook potatoes in it in the microwave! Takes like 10 minutes to cook two potatoes, and they are way better than baked potatoes in the oven! Love it!

A glass bottle dish for my sister, she picked it out. She used to have one but it got left behind last time she moved. The lady explained how they are made when I bought it. They set the bottle in a mold, then put it in a Kiln and melt it down, pretty neat hey!

That time of year!

Well, that time of year has come. Its October 14th, and yes.. you know exactly what I'm talking about! The Western Development Meseum's Christmas Arts and Crafts Show! I'm so lucky to have such a wonderful Husband that is taking me to Saskatoon this weekend just to go to this show, well and to do a couple other errands. I'm pretty excited about this show, and getting some early Christmas shopping done. I think we are leaving right after work to go. Its about a 3 hour drive so probably have to stop for supper somewhere which means fast food.. eww!

Emily over at the Daily Garnish posted an amazing recipe for Asparagus and Mushroom Quinoa Risotto. I can't wait to make this next week! I just opened my bag of Quinoa this week when I made left over turkey soup.

Quinoa is a nutritional powerhouse! Quinoa is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. This website has a huge list of all the good stuff Quinoa has in it and does for you.

Nothing new really going on lately, just taking it easy.. we have our yard prepared for winter. We bought an electric fireplace with some wedding gift cards. I'll have to get a picture of it up here. It makes our living room look so much bigger and cozy! Other than that we've been chugging along.

One can of pumpkin?

Every year at about this time I get a craving for anything and everything pumpkin. Daniel, not so much.. I also crave coffee in this cool weather. Again, Daniel, not so much.

Coffee + Pumpkin = Pumpkin Spice Latte!

Thank you to Kerry over at Baker Girl for this wonderful recipe! Its an absolutely perfect start to my day, and I get my pumpkin fix!

Pumpkin Spice Latte
1/3 cup pumpkin puree (fresh or canned)
1 cup sugar
1/2 teaspoon vanilla
1 1/4 cups water
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon ground ginger

Combine all ingredients in a saucepan and bring to a boil. Cook over medium heat, stirring occasionally to keep syrup from burning.

Let mixture cook together until it becomes syrup-y and begins to coat the spoon (for about 10-15 minutes), then remove from heat.

Refrigerate in a heat-proof container. The syrup will thicken a bit in the refrigerator, but will become syrup-y again when heated.
To make pumpkin spice latte, heat syrup with milk (about 2 cups of milk and 2-3 tablespoons of syrup, depending on how much milk or creamer you want to use and how pumpkin-y sweet you want your latte. I usually use about 2 tablespoons syrup + 2-3 tablespoons of heavy cream to cut down on the sugar.). Pour into a blender or whisk until frothy, for about ten seconds (to make it thick and prevent the pumpkin from settling on the bottom). Pour into cup and stir in about 1/2 cup or more of strong, hot coffee.

Thanksgiving Fun

We spent the long weekend at my parents farm. Everyone had a great visit, including Kato.


Our weekend consisted of:
we had a relaxing night at home. We watched "The Smurfs" which was definitely a good movie in my books. We laughed pretty hard at some of the parts, and now Daniel can't stop saying smurf to everything! We also watched the movie "Apollo 18". Definitely not even close to what I expected it to be. I thought for sure it was going to be scary, about them going a bit nutty in space.. but no.. it was about little aliens.

we drove out to the farm, went on a road trip looking for a board game with my two sisters, had my first Pumpkin Spice Latte! The rest of the day was spent relaxing and playing cards.

we spent the day relaxing, watching football, and eating. Mom made her thanksgiving supper, and it was amazing, as always. Turkey, mashed potatoes, stuffing, corn.. and pumpkin pie for dessert!

we drove back home after hearing that Friday might bring snow. We needed to finish cleaning up our yard and preparing for winter.

So I finally made the big trip to the city and got my passport done. I've been working on trying to get it done for awhile with all the name change stuff. Last week I drove an hour to the nearest Service Canada building and turns out they couldn't do it. I needed it rushed because of an upcoming trip to the Virgin Islands, and would have to go to Passport Canada. So last night I made the trip, 3 big hours to the city for a 5 minute appointment...

I took full advantage of being in the city, and hit up a gym. They charged me like $8 for a one time use. I could have used the pool or the gym. I thought it was a pretty good deal.

I started with a treadmill at 5 minutes slow pace warm up, 15 minutes running and a 5 minute slow pace cooldown. Then moved to some stretches, and then finished it with the elliptical for 15 minutes. Took about an hour total, with a calorie burned total of 240! I made sure I burned the whole 3 AP before jumping off the elliptical. My legs are so sore tonight, I'm thinking of doing some yoga tonight on my biggest loser workout instead of the 1 hour cardio I have booked. I don't know if my legs can handle it, or my big toe actually. I ended up forgetting to pack socks ( I know right! Who does that?) and ended up getting a huge blister on my toe. I've been told not to pop it and just leave it alone.. uuugh!

Comfort in a bowl, first cool weekend in October

Well, its October, and with October comes the cool air and crappy weather. Today was no exception. Both Hubby and I were feeling a bit under the weather. Him, more hungover than anything and me, just plain tired. I've stopped drinking due to the whole baby making situation so no more hangovers for me!

I decided to make a big pot of soup for the week. I think Minestrone soup is one of my favorites. I've never added spinach before but I defintely think I will be from now on!


Minestrone Soup
Serves 8 (makes 12 cups) / 4p+
42 oz fat-free beef broth (3 cans)
15 oz stewed tomatoes with juice
6 oz canned tomato paste
10 oz water
15 oz can kidney beans -  drained and washed
1 tsp italian seasoning
1 1/2 cup(s) frozen mixed vegetables
2 cup(s) cooked macaroni
2 cups Spinach chopped up

Grab a big pot, and dump all the ingredients except macaroni and spinach in it. Boil for 10 minutes. If your going to serve it immediately add the last two ingredients, otherwise wait until your ready to eat and then heat through.

Well, in my world, the bedroom is not the place where the magic happens. Sure, there is a "magic" that goes on in there every now and then, probably less often than I would like. In my world the kitchen is where the magic happens. Every day there is some sort of magic brewing, its my place where I feel like I can just be myself and let my creativeness shine!


Sorry for the crappy photos, just did some quick shots this morning after I had cleaned out all of the cupboards and moved stuff around to accompany the new dishes we bought yesterday. We had over $600 of wedding gift cards to use up and we definitely used half of them on new dishes! I'll show you late what they look like. I didn't get anything that matches and it looks so good!

October Goals

I decided I needed to come up with some goals for myself for the month of October. Specifically in the weight loss / working out department.

Goal 1  - burn over 10000 Calories
Goal 2  - travel over 100km, either by treadmill, elliptical, bike, walking...
Goal 3  - lose 9 lbs. (This puts me at 130. Would like to be lower than that!)

Its manageable.

Sad Thursday

Today on this day, a beautiful baby girl was born. Her skin was dark her eyes were brown and her hair grew into a mass of lovely curls. My beatiful cousin Carmen, who's birthday is today passed away just 2 months ago. Its hard to believe she's been gone. When she was diagnosed in April 2010 with Cancer they had originally given her only weeks to live. No one thought she would survive as long as she did. I'm having a sad day today, thinking about her, and everytime I log into Facebook it says her name in the top right corner.

I have to go get my passport done today, and then to get my hair chopped off. Leaving work a couple hours early! I like excuses to leave work early.

Yoga Tuesdays

Last night was yoga night from 6:3pm - 7:30pm. It was so nice to take the time to myself and stretch and giggle with Mel! I love the instructor. Shes so soft spoken, and when we are doing our final meditation she reads this and its absolutely beautiful!
May today there be peace within.

When I got home hubby had already started grilling chicken for supper, had water boiling for pasta and all I had to do was finish off the homemade Alfredo sauce. He has been so amazing lately! Its so nice to have him home now that harvest and everything is done. He is still a bit busy with his work, and has started selling seed and chemical for next year already.

Tonight I have a Survivor night with the Mother-in-law from 6pm-8pm. I was hoping to get in my biggest loser workout after survivor, But I'm thinking I'm going to have to break it into two parts and do half at lunch and half after I get home from work. Should have got up early this morning but I was up a lot last night with the thunderstorms and torrential downpours!

Overnight Oatmeal

Last night I did my first night of the 12 week bootcamp. I'm starting with working out 3 days a week, because I have yoga on Tuesdays and we've started taking Kato for a walk most nights. I think if I don't start small its going to be too much and I won't stick with it. I'm pretty sore this morning from the bootcamp. The bootcamp is from the biggest loser workout on my Wii. Its twelve weeks, and I do a one hour cardio twice and a boxercise once and then a challange and weigh-in. I've been setting my alarm in the morning to get up but I just can't get myself to roll out of bed. I'm going to keep setting my alarm and eventually my internal alarm will get used to waking up early and I will be able to get out of bed... hopefully anyway.

I made this oatmeal last night and it was ready for me this morning! All I had to do was warm it up!

I've been working on my photography, but the lighting in our house is so bad... I get shadows in everything!


Overnight Oatmeal
serves 1 / 5 P+

2/3 cup milk
1/3 steel cut oats
1 banana, chopped up
1 tsp peanut butter
1 tsp flax seeds

Pour all the ingredients into a jar, shake and stick in the fridge overnight. In the morning take it out, pour into a bowl and stick it in the microwave for a minute or two. Add a bit more milk and enjoy!

Shopping Spree! (kinda..)

Went shopping this weekend when we were in the city. I needed a new pair of jeans because I only have one pair that I comfortably fit in. Also, I found an awesome pair of shoes to wear with my black dress!


On another note, I feel gross today. After a weekend of drinking, and eating horrible I feel like a sack of flour.. yuck! I will be drinking up the water today and eating a super healthy salad for lunch with a hard boiled egg. Hubby's dad gave us some fresh fish last night so we will have that for supper tonight, most likely fried. I'm going to bake mine in a tinfoil pack though I think.. I am so tired of eating icky! Also, I'm thinking thursday I will be getting a new hair-do! I'm pretty excited about it. My hair is getting pretty long and I want to do something different with it. I mean, I grew it out for the wedding but now that the wedding is over its time for something new.

Greek Chickpea Salad

I got this recipe from a friend. I didn't think I would like chickpeas.. but OMG! This is delicious!

For the Salad:
2 Hearts of Romaine lettuce
2 cans chickpeas, drained
1 bunch of green onions
1 red pepper
1 vine tomato
2 tsp crushed garlic

For the dressing:
1/4 cup olive oil
4 Tbsp Red Wine Vinegar
1 Tbsp brown sugar
a dash of salt
a dash of pepper

Wash and cut the lettuce, green onion, pepper, and tomato.  Add in the garlic and chickpeas and give it a toss.
In a jar, add in the olive oil, red wine vinegar, and brown sugar.  Add salt and pepper to taste.  Give it a shake.  Drizzle over the salad to lightly coat.  

Becoming a foodie

Its been a little slow at work lately, I've been doing my research on becoming a "Foodie Blogger". So, first off, lets start at the beginning.. What exactly is a foodie?

A person that spends a keen amount of attention and energy on knowing the ingredients of food, the proper preparation of food, and finds great enjoyment in top-notch ingredients and exemplary preparation.
A foodie is not necessarily a food snob, only enjoying delicacies and/or food items difficult to obtain and/or expensive foods; though, that is a variety of foodie.
So, now that we have that part figured out, lets look at the blogger part.

Is a bored housewife trying to make meaning of her tedious life. And hey, it's not a waste of time to "be on the computer" (it used to be semi-productive in grad school) and post pictures of your kids, cupcakes, paint chips, or the dog.
Pretty much describes me! I've been telling Daniel that no matter what, I will never skimp out on food, or buying groceries. I refuse to buy any super processed food, and any meal that comes in a frozen box. Now all I need to do is work on the blog, and the photography. Two things that I love doing! But where to start? I've been reading articles on photography like crazy! I think first off, I need to pick up some backdrop material and some new place mats. That should make good backdrops. Our dining room is huge with big windows to let in lots of light, so that will be my prime shooting spot.. our whole house has lots of big windows for lots of light.

Aaah, I can't wait to get home tonight to start..

Zucchini Casserole

Well, my lovely Aunt Flow decided to finally show up. She was five days late and we had actually believed that we had conceived the first month trying! Needless to say we didn't, and I've spent most of the day cooking and cleaning and keeping my mind off things. I think we were both finally starting to get our heads wrapped around the fact that I might be pregnant, it was kind of a dissapointment when aunt flow came.. oh well. There is always next cycle :)

I made this for supper tonight, it was so yummy I thought I would share. Its kind of one of those recipes that was just tossed together. I hope you like it.


Zucchini Tomato Casserole
Serves 2

1 zucchini, Peel and take out the seeds and then slice into piece
1/2 white onion, sliced
1 tomato sliced
1/2 cup shredded cheese

Saute the zucchini, onion and spices in some oil until a bit soft.
Pour the zucchini into a casserole dish, layer with tomoto slices, and then the mozzarella cheese.
Bake at 350F for 20 minutes.

I finished it under the broiler to add some "brown" to the cheese.

Mom's Salsa

I had to post this recipe, its absolutely amazing!


Fill a dutch oven 3/4 full with tomatoes, halved, and then mashed up a bit with a potato masher
1 large green pepper
1 large red pepper
3 jalepeno peppers
1 cup celery
1 large onion
4 cloves garlic
1/2 tsp cayenne
1 tbsp chili powder
1 tbsp paprika

Add everything to the dutch oven. Bring to a slow boil and then in a seperate bowl mix 1/2 cup flour, 3/4 cup water. Add some of the salsa mix to warm up the mixture so it doesn't get lumpy when added to the rest of the mixture. Slowly pour into the dutch oven full of salsa and it should thicken.

Then add:

1 tbsp salt
3/4 cup brown sugar
1/2 cup vinegar
2 small cans tomato paste
1/4 tsp baking soda

Simmer for 30-40 minutes.

You can either can this recipe or freeze it.

Quiet Sunday

I'm having a relaxing sunday. Closed the blinds, turned on the tv to something mind numbing and I'm working on some baking.

I have an awesome recipe for two hour bread, and decided to make it into buns today. I made 1 loaf of bread and 9 buns. Just out of curiousity I wanted to see what they would turn out like. Harvest is underway and Dan has been taking work lunches for two weeks now. Thought maybe I could supply him with yummy home made buns and roast.. but turns out hes sick of roast.


All in all, life has been good. We've been talking about babies, and my hormones have been crazy lately since being off birth control. But I've also lost weight, and my boobs are smaller too! I love it! I've been eating super healthy too. I'm so excited to get pregnant. I've been reading alot on labour stories, and thats the whole part of the pregnancy I'm not looking forward too! YIKES!

Anyway, back to my coffee.. ta ta for now!

A New Beginning

Good morning everyone! I finally feel like my life is back in order, and everything is going the way it should be.

The wedding..
Once upon a time a boy met a girl, and they fell in love. We were married on August 13, 2011 and it was a beautiful day. It was warm, sunny, full of laughter, good times, and we got some amazing memories. I couldn't be happier!

The honeymoon..
Two days after the wedding, we were swept away to Elk Ridge Resort for a total of four days. It was relaxing, and we slept probably 75% of the time. Which means we probably needed it. I enjoyed the spa day, the mud wrap, the massage, and the facial. The walks, the food, the drinks, everything was absolutely amazing.

Back to reality..
We've been busy the past couple weeks. Harvest started the day we got back. And Daniel has been busy with that. I went back to work on Monday the 22nd, and have been busy with the new crop year ever sicne. We were supposed to get 40mm of rain last night and I was hoping for some down time with my new hubby but we didn't get any moisture at all! I'm not sure how the weatherman can be that out!

We've also decided we wanted to start trying for a baby. I've kicked myself into full gear in getting healthy again, and eating right. I've bought the "What to Expect When Your Expecting" book, and have been doing some research. I made a doctor appointment next week to go over a couple things regarding getting pregnant and for a physical. So thats my exciting news for today! I probably sound like I'm being anal about the whole thing, but like I told Daniel, I'm the one that has to carry this baby in my tummy for 9 months and I want to be ready to do that, and in tip top shape!

Anyway, back to work for me.. ta ta for now!

Barbequed Chicken Pizza Braid

I seen this posted of foodgawker the other day. Of course, as I was making it up, I forget to add the cheese so I sprinkled it on top. Definitely should have been inside, and because we have a hard time controlling the temperature of our old BBQ, the pizza dough was burnt on the bottom and not cooked on top. Maybe I should have waited for our new BBQ to show up! Definitely was super yummy though!


Barbequed Chicken Pizza Braid
Serves 2

1 can pizza dough
2 cups shredded, cooked chicken
1 whole yellow pepper
1 cup bbq sauce
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese

Preheat the bbq to 400 degrees.

Roll the dough into about an 11X17-inch rectangle.

Using a knife, cut 1-inch wide strips in towards the center, starting on the long sides. There should be a solid strip about 3 inches wide down the center, with the cut strips forming a fringe down each side. Spread half of the barbecue sauce down the center strip. Top with the chicken, peppers and cheese. Fold the side strips over filling, alternating strips from each side and pressing them into the dough on the opposite side, forming a braid. Pinch or twist to seal.

Transfer to a grill safe baking sheet and let rest for 15 minutes.

Bake the braid for 15-20 minutes , until golden brown and bread is baked through.

Let the braidsrest for 5 minutes. Using a serrated knife, cut braid into sections and serve warm.

Chocolate Mug Cake

I had a super bad chocolate cake craving today at lunch. This was super yummy, not like real cake, but still super good!


Chocolate Mug Cake
Serves 2

5 tbsp flour
5 tbsp sugar
2 tbsp cocoa
Salt- a pinch
1/4 to 1/2 tsp Baking powder
1 egg
4 tbsp milk
4 tbsp oil
Pure vanilla extract- a dash
2 microwave-safe coffee mugs

Mix all the dry ingredients in a coffee mug to make the cake.
Beat the eggs slightly in a small mixing bowl and add the rest of the wet ingredients and mix well with a fork. Add in the dry mixture and mix well. Pour out half of the batter into each coffee mug. Microwave the coffee mugs,one at a time, half- filled with the batter, on high, for a minute. If it does not get done in a minute, keep for another 20-30 seconds. Do not overcook, you might end up with a dry cake. (I kept it for 1 minute and 20seconds)
Let it cool and dig in.

Mini Rhubarb Pies

Baking 004

I've been meaning to clean up my rhubarb plants for the past couple days and I finally got around to it last night. I was going to make a Rhubarb Pie for work today, but thats kind of difficult to eat on the job. So I came up with these.

Mini Rhubarb Pies
Serves 20 / 7 Points+

20 pre-made tart shells
1 to 1½ pounds rhubarb (about 5 cups ½-inch diced)
½ cup granulated sugar
¼ cup light brown sugar
¼ cup cornstarch
¼ teaspoon salt
½ teaspoon vanilla extract

Sanding sugar or granulated sugar, for sprinkling

Combine the diced rhubarb, both sugars, the cornstarch and salt in a medium saucepan and place over medium-low heat. Cook, stirring occasionally, until the rhubarb releases its liquid and begins to breakdown, creating a thick, chunky sauce, about 10 minutes. Remove the pan from the heat and stir in the vanilla extract. Set aside to cool to room temperature.

Preheat the oven to 375 degrees F.

Spoon rhubarb filling into the center of each dough round (about 2 big spoonfuls), and place on a cookie sheet. Sprinkle with sugar. Bake until the crust is golden brown and the filling bubbles a bit, 20 to 25 minutes. Serve warm or at room temperature. Top with whipped cream or vanilla ice cream.

I just read a post by one of my favorite bloggers. She is a very inspirational woman, and she has a way of just bringing you in and sharing her life with you. I feel so close to her, even though I don't even know her. Her stories, her journey, had definitely not been the easiest, and today's post is a very touching one.

Please keep in mind this isn't something I like to openly talk about.
I believe in God, even though my faith hasn't always been something I turn to when I need help. Since meeting with the priest for our wedding I think its something I want to start doing.

I have been hurt, I have been told I was a waste of space. I was with an abusive, hurtful man, that lied and cheated and broke my heart over and over again. I struggle daily to get over this. I think about him, how he lied to me. I think of how I feel like I can't open up to anyone, for fear of people hurting me takes over. I trusted someone and loved someone more than they ever deserved!

I agree with Charlie one hundred percent when she says, "this is what hurts for. Its to help you grow past that person you used to be. To learn why things still hurt, and figure out the best way to heal your heart."

My journey over the past year, since we've been engaged, has been a rough one and its not one that I plan on giving up anytime soon. I am constantly looking for ways to better myself. I have taken days off work to basically lay in bed, take down my flag and fix it. I read a book, I watch movies that make me feel better, I think about my past and ways to make my life better. Last time I did this, I decided it was time to find a new job. I signed up for Early Childhood Classes that start in September and I applied for a few different jobs. If my job isn't making me happy, it needs to go.

Daniel and I have been together for over 3 years. We tend to build up walls between each other. We disagree or fight about something, we add a brick to that wall. We have been working lately to bring our walls down, talking about things brick by brick. Its been working out great for us. The last time we had a fight was about a wedding and the people at it. That was about 5 weeks ago. It took us a long time to take those bricks down. Its a touchy subject, but basically his best friends' wives are clicky and don't include me in anything. I ended up crying in the bathroom because he doesn't understand any of it and we had a fight about it. He will probably never understand because he's never been in that situation, but we talked about it and came up with a semi-solution. He can go out with his friends when they are home, but he can't expect me to go out with him everytime. Its OK for me to say no and do something else. We are definitely getting better about fighting and working things out.

I mean, everyone has their own flag, and brick wall. Everyone needs to take the time to work things out, and mend them. When was the last time you took time to do that?

Cheeseburger Macaroni

I was looking for something yummy and filling that my Fiance and I have been missing since I started my weight loss journey. We've been eating super healthy lately and this just seemed perfect!

I remember when I used to go visit Dan when he lived 2 hours away from me. He would cook me something similar. We would be standing in his tiny kitchen (usually a huuuge mess) and he would brown some hamburger, add lots of cheese whiz, and top it with macaroni. I would put together a ceasar salad in a pot (I know right! He had no salad bowls) and shake it to spread the dressing. We would lounge on the couch, watch a movie and eat this. Of course, me being polite never commented once on it, and ate as much as I could. It was very bland... this on the other hand, has way more flavour! So good! The chilis make it so much better!

Cheeseburger Macaroni
Serves 4 / 11 Points+

1 lb lean hamburger meat
1 pkg taco seasoning
1 can tomatoes and green chilies (or petite diced tomatoes)
2 cups water
1 cup elbow macaroni

Brown and drain hamburger meat. Stir in taco seasoning, Rotel, beef broth, and macaroni. Heat to boiling. Reduce heat and cover pan. Simmer 12-14 mins until macaroni is tender.

Meanwhile, make the cheese sauce….

2 Tablespoons butter
2 tbsp flour
3/4 cup milk
1 cup shredded cheddar cheese
1/2 tsp salt
1/2 tsp pepper

Melt the butter in a saucepan. Whisk in the flour and cook, whisking for 5 minutes until fragrant and light brown in color. Whisk in the milk and bring to a boil. Whisk until smooth and thickened. Remove from heat and stir in the shredded cheddar cheese until melted. Add the salt and pepper to the cheese sauce. Pour the cheese sauce over the hamburger mixture. Stir gently to combine.

Stagette Party

Lots of laughs, good times had by all! But I also gained 4lbs. I changed my weigh in day to Fridays. Having it on a Sunday was cruel cruel punishment!

I had a wonderfully OP day yesterday. I was starving when I got home from work yesterday and snacked on some crackers and cheese. But thats ok.. I had some extras.

I tried my zumba game for wii last night. It kicked my ass! I was schweating after 5 minutes and I couldn't do half the moves but I just kept jumping and moving and didn't stop for the whole 20 minute workout! Whew.. and then I did a 20 minute speed walk on my treadmill. I think I might renew my gym membership for a month and go in the mornings. I just don't find that working out at home is enough. I want the weights and the workout I get there. I love getting up and going to the gym for an hour in the morning.. its quiet and it wakes me up and gets me moving! I'm kinda scared though that if I start working out they are going to need to take in my dress. I got a phone call last night and the owner said the seamstress is gone back to her homeland because her mother is ill.... I wont get to do my final fitting until the middle of July now! I'm trying not to stress about it. Everything wil be done on time I'm positive!

Anyway.. happy thoughts.. I'm kinda loving this rain right now. Means its going to be a quiet day at work!

The Green Monster!

My brother and sister bought me a blender for my birthday. I had to try something new in it and this is what I came up with. It's a wonderful, filling breakfast! And a great way to get fruits and veggies plus dairy in!

Green Monster
1 serving / 9 p+

Handful of Ice
1 tbsp flax
1/2 cup berries
1 banana
1/4 cup greek yogurt
1/2 cup milk
2 cups spinach

Blend well on high. Pour into a glass and enjoy!

I am not good at this whole blogging thing! I can do it for a day or two and then I completely forget about it! I'm really trying to get into the habit of doing this everyday, I swear!

This past weekend we celebrated my birthday. Friday we spent the night at a friends house and ordered pizza in at 2 am after a succesful night of drinking. Saturday we went out to my farm, then to the city where we picked up a couple things we needed and went out for supper. Then made the 3 hour drive home and went out for more drinks with friends. At 4:30am we decided we needed to go for a round of golf! Can you believe it! We got home at 10am and crashed hard all day sunday! I feel like my sleeping pattern and food schedule is all off! I was so hungry yesterday all day, but I managed to stay OP!

We picked up a new tv yesterday, So I'll be able to run on the treadmill and not have the tv go on and off! We also took the tv stand from the farm, and I rearranged the basement so we have a "living room" now. Our basement desperately needs a good painting.. maybe a winter project this year!

Then tonight, we are planning on moving the bed in the spare room out, and putting the spare tv upstairs, so I can do my zumba/insanity or play wii upstairs. I think I'll end up putting it in the living room so I can play my wii games, but for zumba, etc it will be nice to have the spare room.

Anyway, I should get back to work :)

Missing in action

I managed to lose 2 lbs this week! I weighed in on Sunday so this is a little late!

June Goals

I have 5 goals for June!

1. Book boudoir photo session for my fiance's wedding present. This is a huge step for me as I am usually so self conscious about my body. I usually have a couple layers of clothes on, and refuse to take them off for anyone! Yes, I have sex with the lights OFF! I hate my body naked!

2. Sign up for a challenge. I need something to keep me motivated. I need other people to hold me accountable for what I'm doing, and I think if I had a little bit of competition it would make me work that much harder!

3. Lose 6 lbs, and keep it off! That would put me at 130lbs... my goal weight is 123lbs. Thats a little more than a pound a week, but I need it.. I need to get in the groove of working out, and I can do it!

4. Workout/run/walk/bike for at least 4 days a week. Try and go for at least 2 miles a day. Shouldn't be too hard, the treadmill counts! 2 miles a day!

5. Track track track! Everything that goes in my mouth must be tracked!

Daily Menu for June 1, 2011

Breakfast: 1 serving Quaker Weight Control Oatmeal
1/2 cup blueberries
1 cup skim milk
1 cup coffee with 1 tbsp hazelnut flavor

1 mandarin orange
10 almonds

2 cups mixed greens, 1/2 cup tomato with 2 tsp olive oil, 2 tsp lemon, salt and pepper
1/2 Turkey Sandwich (1 slice whole grain bread, 2 slices deli turkey, 1 tbsp mayo, 1 tbsp dijon mustard, 2 leafs lettuce, 2 slices cheddar cheese)

1 cup fat free plain yogurt with 1 tsp vanilla
1/2 cup strawberries

Dinner 1 servings pork chops (bbq'd)
1 corn on the cob
1 cup cooked egg noodles with 1 serving homemade lowfat alfredo sauce

2 tbsp tostitos spinach dip
12 whole grain tostitos bite size chips

So for my GHGs:
water - will drink throughout the day its only 10pm and I've already had 3!
dairy - I counted 3 but I'm not sure (1 cup milk, 1 cup yogurt, and 2 cheese slices)
veggies - I counted 7 all together (I didn't count the lettuce in my sandwich)
oils - I have 2 tsp in my salad
multivitamins - take at lunch

So I've taken everything I've learned in the past day and done up another menu..

Daily Menu for May 31, 2011
Breakfast: 1 serving Quaker Weight Control Oatmeal, 1/2 cup blueberries, 1 cup skim milk, 1 cup coffee with 1 tbsp hazelnut flavor
Snack: 1 mandarin orange
Lunch: 2 cups mixed greens with 1 tsp olive oil and salt and pepper, crab melt sandwich
Dinner: 1 serving Greek Ribs, 1/2 cup Lemon Potatoes, 1 cup cucumber sticks
Dessert: 1 cup plain yogurt with 1/2 cup strawberries
Snack: 2 tbsp spinach dip with 12 whole grain tostitos bite size chips

This should definitely follow the GHGs. There is extra oil in the lemon potatos, and my milk servings are in the glass of milk and with the yogurt..both those equal 2 servings. I have a total of 8 fruit/veggies, take my multivitamins with lunch, and water throughout the day.. should be good!

Lemon Potatoes

Lemon Potatoes
8 Servings (1/2 cup each) / 3p+

My favorite lemon potatoes!

1/4 cup lemon juice, canned or bottled
1 cup water
2 tbsp Chicken OXO
1 Tbsp parsley
1 Tbsp basil
1 Tbsp dried oregano
1/4 cup canola oil
4 cup uncooked potatoes, cut into bit sized pieces

Place the potatoes in a casserole dish.
In a bowl, mix together the remaining ingredients. Pour over the potatoes.
Cover and place in a preheated 375F oven and bake for one hour.

Daily Menu Revamping

I've been having so many troubles lately on Weight Watchers. I find myself soo hungry sometimes I would eat anything in sight! I've been trying to follow the Good Health Guidelines (GHG) this week more, and trying to figure out actual serving sizes and I've started to measure everything! Probably something I should have done the first week I started, buuut I didn't.. Now going onto week 3 this is where I'm at.

1. Fruits, vegetables and leafy greens
Serving sizes are 1 cup for leafy greens and 1/2 cup for all other vegetables and fruits. The lettuce alone in a large salad may well count for 2 or more vegetable servings. The default portion for most fruits and vegetables in the Plan Manager is one cup.

2. Packaged whole grains
Use the nutrition label to determine the serving size of packaged whole grain foods.

3. Milk and dairy
If you are more than 50 years old or are a teenager or a nursing mom, increase milk servings to three each day. Examples of one milk serving include 1 cup of milk or yogurt or 1.5oz of many cheeses.

4. Healthy oils
Having 2 teaspoons of healthy oil each day ensures that you get the vitamin E and essential fatty acids that your body needs. Use the oil on salads, in cooking or as an ingredient in a mixed dish. Two teaspoons of oil is not even 1 tablespoon, so be careful to measure, since each additional teaspoon counts as another PointsPlus value of 1.

5. Lean meat and fish
A serving of lean meat or fish is generally 3 to 4 ounces, about the size of a deck of cards.

6. Water Six 8-ounce glasses of water is just 3 standard 16-ounce bottles.

So.. My problem isn't actually fruit and veggies, or whole grains or lean meats and fish. Its dairy and oils.

If 1 cup of yogurt or milk is one serving.. and I eat 1/3 cup of yogurt each day, plus about 1/3 of a cup in my oatmeal every morning, I still need one more 1/3 cup of milk.
I measured today and 3 slices of cheese is 1.5 ounces so I've made sure to include that in my daily menu.

I've added 1 tsp oil to my salad at lunch, and had it with salt and pepper and feta cheese. It was actually super yummy!
My other tsp will be in my stirfried vegetables at supper.

Breakfast: Oatmeal with 1/3 cup milk, 1/2 cup blueberries, Coffee with 1 tbsp Hazelnut Flavour
Snack: 1/3 cup drinkable yogurt, 1 mandarin orange
Lunch: 2 cups Romaine lettuce with 1 tsp oil and salt&pepper sprinkled with 1 tbsp feta cheese, 1/2 of a multigrain bagel with 1/2 tbsp peanut butter
Snack: 1.5 ounces Cheese, 3 crackers, 1/2 cup cucumbers, 10 almonds
Dinner: Asian Sesame Chicken (1 breast), 1/2 cup Rice, 1 cup Stirfry Vegetables, 1/3 cup milk

I'm down again this week! Aaaand it was my time of the month! I'm so proud of myself!

Today is my day off from any kind of physical activity... just cleaning up the house and getting caught up on laundry and fun stuff like that. Dan went for a couple rounds of golf with some buddies and I'm actually in my pjs watching movies. We didn't get back until late last night and I didn't have a great sleep so I can see myself having a nap in a bit. Just a relaxing day. :)

Well today was an amazing day! I had a blast shopping and had such good laughs with my best friend Mel. She is the most wonderful, understanding person in the whole world. I spent around $200 and bought myself a whole new wardrobe! I'm so proud of myself! New, shorts, capris, dress clothes, lots of fun stuff!

Then we went and picked up our boys from the Casino and went for supper. I stayed on plan and had exactly what I planned on having and stayed within my points! So proud of myself! Then off to THE MOVIE!


It was probably the best movie of the year! I had such an amazing time! And I just can't believe that I stayed on plan! I'm so absolutely proud of myself!

Green Smoothie

I was looking for a way to get in some veggies this morning.. this is perfect!


Green Smoothie
1 serving / 4 Points+

1 cup ice cubes
2 cups spinach
1/2 cup fat free milk

1 cup berries, mango, apples, grapes.. whichever you prefer
1/2 cup fat free plain yogurt

Crush ice cubes in blender, add in the remaining ingredients and blend on liquefy setting. Pour into glass and serve.

My smoothie didn't turn out very green, but it sure was tasty!

I'm so glad today is done, everyone just seemed to be in a horrible mood! I didn't sleep much last night because of my allergies, but mostly because of my dog. I absolutely love my dog to death but he never wants to sleep at night! I don't know, maybe I'm just grumpy due to TOM, who knows.. I don't really have much to write today, and don't have much energy to write anyway..

Daily Menu
Breakfast - Quaker Weight Control Oatmeal and coffee
Snack - Orange, Drinkable Yogurt
Lunch - Chicken Breast Sandwich
Snack - Apple, Vinta crackers and cheese
Dinner - Corn on the cob (elote), Scrambled Egg Quesadilla
AP - I'm going to try to get a bike ride in tonight yet, but I have to finish cleaning the house
