Zucchini Casserole

Well, my lovely Aunt Flow decided to finally show up. She was five days late and we had actually believed that we had conceived the first month trying! Needless to say we didn't, and I've spent most of the day cooking and cleaning and keeping my mind off things. I think we were both finally starting to get our heads wrapped around the fact that I might be pregnant, it was kind of a dissapointment when aunt flow came.. oh well. There is always next cycle :)

I made this for supper tonight, it was so yummy I thought I would share. Its kind of one of those recipes that was just tossed together. I hope you like it.

Zucchini Tomato Casserole
Serves 2

1 zucchini, Peel and take out the seeds and then slice into piece
1/2 white onion, sliced
1 tomato sliced
dill
salt
pepper
garlic
1/2 cup shredded cheese

Saute the zucchini, onion and spices in some oil until a bit soft.
Pour the zucchini into a casserole dish, layer with tomoto slices, and then the mozzarella cheese.
Bake at 350F for 20 minutes.

I finished it under the broiler to add some "brown" to the cheese.
