Pumpkin Muffins

Halloween is almost here, and its starting to get cool and I crave pumpkin now more than ever! These muffins are the perfect fix with my morning cup of coffee.

I meant to make these last night but ended up being falling asleep in front of the tv after supper.. oops. Good thing there are only a couple ingredients and I was able to throw these together this morning! Super quick, easy and delicious!

pumpkin muffins 

Spiced Pumpkin Muffins
Makes 12 muffins

1 box of golden cake mix
1 (14oz) can of pumpkin
1 egg white
1/4 tsp each cinnamon, nutmeg, cloves

Mix thoroughly and scoop into muffin cups. Bake at 350F for 20-25 mins.

Good morning everyone, and happy Friday! This week seemed to just drag on forever! I have a long list of "To Do" projects this weekend. That list goes a little something like this;
  1. Finish painting the nursery - yellow and white stripes. First coat of white on so far last night.
  2. Go through the storage room downstairs and organize it! - put away wedding presents and make room for a bed in the room.
  3. Take the bags of leaves to the farm - and maybe the couch from the corner upstairs.
  4. CLEAN! - sweep/wash floors, dust, vaccuum, clean bathroom...
  5. Groceries
  6. Make sure to get lots of rest :)
Shouldn't take me too long to do all of the above. My main concern is the couch in the corner upstairs. Right now there are two couches, a table, and some shelves.. need to clean it out and make more room for my desk thats coming. I can't wait to have a little home office area!

When we moved into the house it originally had 3 bedrooms on the main floor, plus the kitchen, a huge dining room, living room and a little corner off the living room that is useless space. In the basement there are another 2 bedrooms, a living room and a laundry room. Upstairs, we turned one of the bedrooms into Daniel's home office, the other bedroom is currently being painted into a nursery, and then our bedroom. The kitchen, dining room and living room have remained the same and the corner space is now going to be a home office (as soon as my desk and new computer come in!). Hoping the couch is not too big and can stay there, but I'm doubting it. The 2 bedrooms downstairs will be a spare room, a spare room plus storage room. Whew.. lots of house remodeling in the past year.. hopefully after this we are done!

I'm thinking about making homemade pizza for supper tonight, something quick and yummy! Both Daniel and I haven't been sleeping very well this week and we are both looking forward to a quiet and cheap weekend at home!

Pepper Steak

This is one of those dishes that is just an absolute comfort food for me! When Daniel is lucky its made ontop of spaghetti, and if I'm lucky I serve it with yummy rice to soak up the sauce!

Pepper Steak
Serves 4

1lb of round steak cut into stripes
2-3 peppers cut into stripes
1 cup of mushrooms, sliced
1 onion, sliced
pepper flakes
1 tsp garlic
1/2 tsp ginger

1 can of beef broth
1/4 cup soya sauce
3 tbsp sugar
2 tbsp cornstarch
1/2 cup water

In a deep frying pan or wok, fry the stripes of meat over a high heat in some oil. When cooked, set aside on a plate. Turn down the heat to a medium-low and add in the veggies. Cook until soft.

Meanwhile in a saucepan mix up all the ingredients for the sauce except cornstarch and water which should be mixed in a seperate bowl. Once the sauce is boiling add the cornstarch mixture.

When the veggies are done, add the meat back in and sprinkle in the pepper flakes, ginger and garlic. Pour over the sauce and mix until everything is coated and looks yummy!
Serve with rice or spaghetti.


Weekend Recap on a Wednesday!

Good Morning all my beautiful readers! Sorry I haven't wrote in awhile, I've been feeling a bit down lately. Just tired, and blah.. Not sure what thats all about.

My weekend was amazing! I spent a good couple hours at the craft show, and was definitely inspired to do a little bit of crafting of my own! I just need to find some time and energy to do it. I am thinking about sewing some baby blocks for a friend that is expecting, to go along with the blanket I'm knitting. The tutorial is here for the blocks. Aren't they the cutest thing ever? I was thinking about sewing a letter to spell B-A-B-Y on each of them.

I picked up a couple super neat items at the craft show. Wish I would have picked up more though.. oh well. There is a craft show coming up in November in the next town over, I will definitely have to hit it up!

This is a premade scrapbook I bought for my Aunt. She loves scrapbooking and I thought this would be perfect for her! I'm going to fill it with some fun recipes and maybe add a couple pictures.


This is a life savor for me! I just hope my mother in law thinks the same thing. You cook potatoes in it in the microwave! Takes like 10 minutes to cook two potatoes, and they are way better than baked potatoes in the oven! Love it!

A glass bottle dish for my sister, she picked it out. She used to have one but it got left behind last time she moved. The lady explained how they are made when I bought it. They set the bottle in a mold, then put it in a Kiln and melt it down, pretty neat hey!

We got home at 1:00am on Sunday morning.. went straight to bed. *Yawn* wish I was still there now!

That time of year!

Well, that time of year has come. Its October 14th, and yes.. you know exactly what I'm talking about! The Western Development Meseum's Christmas Arts and Crafts Show! I'm so lucky to have such a wonderful Husband that is taking me to Saskatoon this weekend just to go to this show, well and to do a couple other errands. I'm pretty excited about this show, and getting some early Christmas shopping done. I think we are leaving right after work to go. Its about a 3 hour drive so probably have to stop for supper somewhere which means fast food.. eww!

Emily over at the Daily Garnish posted an amazing recipe for Asparagus and Mushroom Quinoa Risotto. I can't wait to make this next week! I just opened my bag of Quinoa this week when I made left over turkey soup.

Quinoa is a nutritional powerhouse! Quinoa is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. This website has a huge list of all the good stuff Quinoa has in it and does for you.

Nothing new really going on lately, just taking it easy.. we have our yard prepared for winter. We bought an electric fireplace with some wedding gift cards. I'll have to get a picture of it up here. It makes our living room look so much bigger and cozy! Other than that we've been chugging along.

Should get back to work.


One can of pumpkin?

Every year at about this time I get a craving for anything and everything pumpkin. Daniel, not so much.. I also crave coffee in this cool weather. Again, Daniel, not so much.

Coffee + Pumpkin = Pumpkin Spice Latte!

Thank you to Kerry over at Baker Girl for this wonderful recipe! Its an absolutely perfect start to my day, and I get my pumpkin fix!

Pumpkin Spice Latte
1/3 cup pumpkin puree (fresh or canned)
1 cup sugar
1/2 teaspoon vanilla
1 1/4 cups water
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon ground ginger

Combine all ingredients in a saucepan and bring to a boil. Cook over medium heat, stirring occasionally to keep syrup from burning.

Let mixture cook together until it becomes syrup-y and begins to coat the spoon (for about 10-15 minutes), then remove from heat.

Refrigerate in a heat-proof container. The syrup will thicken a bit in the refrigerator, but will become syrup-y again when heated.
To make pumpkin spice latte, heat syrup with milk (about 2 cups of milk and 2-3 tablespoons of syrup, depending on how much milk or creamer you want to use and how pumpkin-y sweet you want your latte. I usually use about 2 tablespoons syrup + 2-3 tablespoons of heavy cream to cut down on the sugar.). Pour into a blender or whisk until frothy, for about ten seconds (to make it thick and prevent the pumpkin from settling on the bottom). Pour into cup and stir in about 1/2 cup or more of strong, hot coffee.

Thanksgiving Fun

We spent the long weekend at my parents farm. Everyone had a great visit, including Kato.


Our weekend consisted of:
we had a relaxing night at home. We watched "The Smurfs" which was definitely a good movie in my books. We laughed pretty hard at some of the parts, and now Daniel can't stop saying smurf to everything! We also watched the movie "Apollo 18". Definitely not even close to what I expected it to be. I thought for sure it was going to be scary, about them going a bit nutty in space.. but no.. it was about little aliens.

we drove out to the farm, went on a road trip looking for a board game with my two sisters, had my first Pumpkin Spice Latte! The rest of the day was spent relaxing and playing cards.

we spent the day relaxing, watching football, and eating. Mom made her thanksgiving supper, and it was amazing, as always. Turkey, mashed potatoes, stuffing, corn.. and pumpkin pie for dessert!

we drove back home after hearing that Friday might bring snow. We needed to finish cleaning up our yard and preparing for winter.

So I finally made the big trip to the city and got my passport done. I've been working on trying to get it done for awhile with all the name change stuff. Last week I drove an hour to the nearest Service Canada building and turns out they couldn't do it. I needed it rushed because of an upcoming trip to the Virgin Islands, and would have to go to Passport Canada. So last night I made the trip, 3 big hours to the city for a 5 minute appointment...

I took full advantage of being in the city, and hit up a gym. They charged me like $8 for a one time use. I could have used the pool or the gym. I thought it was a pretty good deal.

I started with a treadmill at 5 minutes slow pace warm up, 15 minutes running and a 5 minute slow pace cooldown. Then moved to some stretches, and then finished it with the elliptical for 15 minutes. Took about an hour total, with a calorie burned total of 240! I made sure I burned the whole 3 AP before jumping off the elliptical. My legs are so sore tonight, I'm thinking of doing some yoga tonight on my biggest loser workout instead of the 1 hour cardio I have booked. I don't know if my legs can handle it, or my big toe actually. I ended up forgetting to pack socks ( I know right! Who does that?) and ended up getting a huge blister on my toe. I've been told not to pop it and just leave it alone.. uuugh!

Comfort in a bowl, first cool weekend in October

Well, its October, and with October comes the cool air and crappy weather. Today was no exception. Both Hubby and I were feeling a bit under the weather. Him, more hungover than anything and me, just plain tired. I've stopped drinking due to the whole baby making situation so no more hangovers for me!

I decided to make a big pot of soup for the week. I think Minestrone soup is one of my favorites. I've never added spinach before but I defintely think I will be from now on!


Minestrone Soup
Serves 8 (makes 12 cups) / 4p+
42 oz fat-free beef broth (3 cans)
15 oz stewed tomatoes with juice
6 oz canned tomato paste
10 oz water
15 oz can kidney beans -  drained and washed
1 tsp italian seasoning
1 1/2 cup(s) frozen mixed vegetables
2 cup(s) cooked macaroni
2 cups Spinach chopped up

Grab a big pot, and dump all the ingredients except macaroni and spinach in it. Boil for 10 minutes. If your going to serve it immediately add the last two ingredients, otherwise wait until your ready to eat and then heat through.

Well, in my world, the bedroom is not the place where the magic happens. Sure, there is a "magic" that goes on in there every now and then, probably less often than I would like. In my world the kitchen is where the magic happens. Every day there is some sort of magic brewing, its my place where I feel like I can just be myself and let my creativeness shine!


Sorry for the crappy photos, just did some quick shots this morning after I had cleaned out all of the cupboards and moved stuff around to accompany the new dishes we bought yesterday. We had over $600 of wedding gift cards to use up and we definitely used half of them on new dishes! I'll show you late what they look like. I didn't get anything that matches and it looks so good!

October Goals

I decided I needed to come up with some goals for myself for the month of October. Specifically in the weight loss / working out department.

Goal 1  - burn over 10000 Calories
Goal 2  - travel over 100km, either by treadmill, elliptical, bike, walking...
Goal 3  - lose 9 lbs. (This puts me at 130. Would like to be lower than that!)

Its manageable.
