Lazyman Cabbage Casserole

Feb 15, 2012

Every now and then we need some comfort food to warm us up, comfort us.. Yesterday was no exception for me. It was Valentine's day, the day of love, the day of being with the one you love, and there I was sitting at home alone...

Lazyman Cabbage Roll Casserole
makes a 9x13" pan

Prep Time: 15 minutes
Cook Time: 75 minutes

Ingredients
  • 2 t. canola oil
  • 1 onion, finely chopped
  • 1 green bell pepper, seeded and finely chopped
  • 2 garlic cloves, minced
  • 1 lb. lean ground beef
  • 1 (14 ½ oz.) can diced tomatoes with mild green chiles
  • 1 (8-oz) can tomato sauce
  • ½ c. cooked white rice (I use brown rice)
  • ½ small head cabbage (about ¾ lb.), shredded
Instructions
Preheat oven to 350. Spray 9x13 in. baking dish with nonstick spray.
To make the filling, heat the oil in large nonstick skillet over med-high heat. Add the onion, bell pepper, and garlic; cook, stirring occasionally, about 8 minutes. Add the beef and cook, breaking it up with a wooden spoon, until the liquid evaporates and the beef begins to brown, about 6 min. Stir in the diced tomatoes, tomato sauce, and rice; bring to a boil. Remove from the heat.
Spoon half of the filling in an even layer on the bottom of the baking dish. Top with all of the cabbage, then top with the remaining filling. Cover with foil and bake until the filling is hot and bubbly and the cabbage is very tender, about 1 ¼ hrs.

A day at home

Feb 14, 2012

First off, happy love day!

Second, I feel horrible.. not sure if the morning sickness is back with a vegence or if I actually caught something. The flu has been going around lately so I wouldn't be surprised. I slept most of the day but I did have time to watch some tv and paint my nails.. Aren't they awesome! I used those fancy scrapbooking scissors to cut tape and then painted over them and finished it with a gold glitter.

Daniel has been on the road lots lately and today was no exception. He left early and won't be back until sometime Thursday. Then Friday we are off to the spa with some of his retails for the weekend. Which reminds me I should do my weekly update early this week :)

Well, at least I'm feeling a little bit better and have some amazing comfort food in the oven right now.. I will update you tomorrow and maybe even include a recipe! I know right! Wohoo!

Week 21

Feb 10, 2012

Another busy week has come and gone. Daniel and my schedule's didn't match up at all, resulting in a whole week of barely seeing each other! Our ultrasound was on Monday and we went out for supper with a group of friends that had just returned from a trip to Europe! How exciting for them, it sounds like their trip was amazing.

I've been feeling the baby kick like crazy lately! Although some days are stronger than ever, and it seems like baby has found my bladder which must make for a good trampoline!

I also downloaded an App on my Iphone that lets me hear baby's heartbeat. I haven't been able to find it yet, but I was able to find the bloodflow. Daniel isn't a huge fan because of how loud the headphones have to be to hear it.. I think its neat. Maybe this weekend I will try a bit harder to find it.

Ultrasound Day

Feb 6, 2012

Today at 2:40 in the afternoon, we got a little sneak peak of our little bean.

ultrasound
I couldn't believe how clear it was! We mesmerizingly watched as our baby sucked on it's fingers, swollowed, and moved around in my tummy. I couldn't believe how much little bean moved and I couldn't feel!

It was definitely a heartwarming experience.

We got three print outs, and I plan on blowing one up to an 8x10 and transfering it onto a canvas for the nursery.

Week 20 - HALFWAY!

Feb 3, 2012

Wow, what a week.. Let me just begin by saying Beauty and the Beast musical was amazing! Best show I've seen yet! We didn't get home until 2 am, and I had to take the next morning off to sleep in.. but it was so worth it! I went with my bestie Mel, and met up with my mom and two sisters for supper. Their seats were only a couple over from ours. It was such an amazing show.. I know I can't say that enough!
