Sour Cream Rhubarb Pie

It has been pouring rain most of the day today, and we were up late last night fighting bedtime already! So naturally this afternoon began with a 2 hour nap for me after Maddox's feeding. After I woke up I managed to clean the bathroom, feed Maddox an then I remembered I had bought some pie shells. So Maddox went down into his crib for his afternoon nap and I got busy!

See rain.. And thunder.. And lightening. I quickly darted outside during all of this to pick me some rhubarb!

Sour Cream Rhubarb Pie

Prep Time: 15 minutes
Cook Time: 50 minutes
Keywords: bake dessert rhubarb

Ingredients (2 pies or 1 deep dish pie)
  • 1 3/4 cup sugar
  • 1/4 cup flour
  • 1 egg
  • 3/4 cup sour cream
  • 4 cups rhubarb
  • 1 deep dish pie shell or 2 normal shells
Preheat oven to 425F.
Mix all sugar ingredients in a large bowl.
Add rhubarb and pour into pie shells.
Bake at 425 for 15 minutes, and then lower temperature to 350 and bake for another 35 minutes or until set.

My Baby and Body - One Month

Baby Update

Maddox is doing great! There are a lot of different opinions on where babies should sleep at night, but when it comes down to it everyone seems to agree on, "do what works for you". So Maddox ended up spending most of the nights during his first month in bed with us. It was easier for feedings, easier for me to tell when he was awake or sleeping. He is a very noisy sleeper spending most of the time grunting or making little squeaky noises. Its super cute, but also keeps me up at night. We usually feed between 9-10pm, he wakes around 2 and then not again until 6 for feedings so we are both getting 8 hours of sleep at night!

We will be starting to move him to his crib this week and using the sleep sheep to get him to stay asleep.

I can definitely say he is gaining weight! At his two week appointment he had gained all his birth weight back plus just over half a pound! He was just over 8.5 lbs.

He is really strong, and has been able to hold his head up for two weeks. His legs are also getting strong and he likes to be on them standing and jumping. He has been practicing smiles and laughing in his sleep and I cant wait until he responds to us with his first little giggle!

My Update

I am feeling absolutely amazing! My stitches are almost all out and my swelling and bruising is definitely gone. I still get sore when I have been on my feet all day, but its nothing a little tylenol and aspirin won't get rid of!

Like I said before I am getting a good sleep at night even if I do take a nap in the afternoon with him sometimes.

My doctor appointment is Aug 8 and will be discussing exercise, birth control and more nutrition.

A weekend getaway!

Every weekend since Maddox was born it seems we have been on the go. Whether it was to my parent's or to the in-laws cabin or to a town 5 hours away for a wedding, we've been on the road. This past weekend was no exception! We left late thursday afternoon for Daniel's family cabin at Candle Lake.
It was the first time since Maddox was born that Daniel and I had alone time together. It was so nice to have Aunts, Uncles and cousins that wanted to hold him and carry him.
Thursday was an early night for us. It was mostly just all the Aunts and girl cousins.
Friday, after everyone else showed up, we had an amazing appetizer supper. There was so many things to eat from chicken wings, dips, chips, crackers, ribs, home made sushi and more!
Saturday, we slept in until 10, we had an amazing breakfast that consisted of over night french toast, morning wife saver, yogurt and granola and tons of fruit. After the feast Daniel took me for my first ever jet ski ride! It was so fun, and not as scary as I though it was going to be, even if I was shaking after. The boys started a beer darts tournament when we got back, and we ended the afternoon with some beach time. Even Maddox got to test out rhe water!
Sunday morning we left early after feeding Maddox. Who knew planning a 2 hour drive would be so complicated but having a baby definitely changes everything!
