Sour Cream Rhubarb Pie

It has been pouring rain most of the day today, and we were up late last night fighting bedtime already! So naturally this afternoon began with a 2 hour nap for me after Maddox's feeding. After I woke up I managed to clean the bathroom, feed Maddox an then I remembered I had bought some pie shells. So Maddox went down into his crib for his afternoon nap and I got busy!



See rain.. And thunder.. And lightening. I quickly darted outside during all of this to pick me some rhubarb!

Sour Cream Rhubarb Pie

Prep Time: 15 minutes
Cook Time: 50 minutes

Ingredients (2 pies or 1 deep dish pie)
  • 1 3/4 cup sugar
  • 1/4 cup flour
  • 1 egg
  • 3/4 cup sour cream
  • 4 cups rhubarb
  • 1 deep dish pie shell or 2 normal shells
Instructions
Preheat oven to 425F.
Mix all sugar ingredients in a large bowl.
Add rhubarb and pour into pie shells.
Bake at 425 for 15 minutes, and then lower temperature to 350 and bake for another 35 minutes or until set.
