Vegetable Packed Mini Burgers

I've been really struggling with finger foods for M. It isn't so much what he can eat, its how to prepare it so he can pick it up and eat it. He's been doing really well with the finger foods, choking has been minimal, and look how happy he is!
So far for "baby mush" he's had: applesauce, pear, blueberries, banana, avocado (not a fan), carrots, peas, broccoli, white potato, sweet potato, peaches, prunes, chicken, roast
And for "finger foods" he's only had: puffs, chicken, sweet potato, roast, carrots, teething cookies, cheerios.

Not a huge list.. I'm working on it..

But these little babies are filled with veggies, taste amazing, and both of us can eat them! I ate mine burger style, he ate his, well, cookie style.
Vegetable Packed Mini Burgers

Prep Time: up to 12 hours
Cook Time: 20 minutes

  • 1 lb hamburger
  • 1/2 cup bread crumbs
  • 1/2 cup applesauce (unsweetened)
  • 1 egg
  • 1/2 cup shredded carrot
  • 1/4 cup diced onion
  • 1/2 cup chopped spinach
  • Salt and Pepper to taste
In a small bowl stir together the egg, applesauce, carrots, onions, salt, and pepper.
In a large bowl combine hamburger and bread crumbs. Fold egg mixture into hamburger mixture; mix well. Cover and refrigerate for 2 to 24 hours. (This step is important for the bread crumbs to absorb moisture and flavor.)
Heat oven to 450 degrees F. Shape mixture in 2-inch diameter balls. Place balls on a foil-lined 15x10x1-inch baking pan and flatten slightly. Bake for 15-20 minutes or until no pink remains (170 degrees F).
