Blueberry Cobbler

Sometimes in our lives we crave something a little sweet. Ok, let's be honest ladies... about once a month we lose all control and shove sweet things into our mouthes without any care in the world.. just kidding.. sorta.

Anyway, today I was craving something sweet, and I've been on a kick lately to use up all the "stuff" in our freezer. I have lots of "stuff" to use up in there, I mean I have two fridge freezers and one huge freezer full of "stuff". I won't get into detail about all the "stuff" I have in them because I think I would probably lose you somewhere with all the "stuff" in the bottom of the "stuff" pile.. if I haven't already.

This cobbler, you can make it as sweet as you want. I used one cup of sugar in the batter, and probably sprinkled at least another 1/4 cup on top during the last 10 minutes.

Blueberry Cobbler

Cook Time: 1 hour

  • 1 cup self rising flour
  • (Or 1 cup white flour, 1 1/3 tsp baking powder, 1/3 tsp salt)
  • 1/2 cup butter, melted
  • 1 cup milk
  • 1 cup sugar (plus more for topping)
  • 2 cups blueberries, fresh or frozen, dried off so there's no extra water
Preheat oven to 350F.
In a mixing bowl combine the flour and sugar. Add in the milk and melted butter mixing well until there are no lumps.
Pour the batter into a well greased 9 inch pan.
Evenly spread the berries over the top pressing into the batter a bit.
Sprinkle with some sugar, about 2 tbsp.
Bake in preheated oven for one hour or until brown and bubbly.

Doesn't it look mouthwatering delicious! I may or may not be on my second or third piece, my "pieces" may or may not also be quarters of the whole cobbler.. so in other words it's half gone..
