Friday things #2

Another week has come and gone, this was a fast week! Back to work, back to daycare, work supper, new office.. all sorts of things going on!

{one} First off, I want to say how much I looove my new tattoo! Last Sunday, I went with my husband, father in law and sister in law to get tattoos. My father in law got this huge fish tattoo I helped design, I got my sons name, and my sister in law got a touch up.

{two} My son's birthday cake is also at the top of my list this week.. we ate leftovers for a couple days. It was just a vanilla cake with colored buttercream icing. It was amazing!

{three} My new hair color, thanks to a boxed hair dye. I'm pretty sue its a sin to use hair dye, but the blonde in my hair was starting to change to orange thanks to our gross water. So I grabbed a box of hair dye and went crazy... I'm also back at work so I can't just go get my hair done anyday anymore.. extreme sad face..

{four} CHRISTMAS ORANGES! I love oranges, and mandarin oranges are the best! So easy to grab and take to work as a snack.. and these ones are amazing!

{five} How about this wine.. definitely the best way to end the day

First Birthday Party, and Back to Work!

Well a year has come and gone, and my little baby boy is one already! We had the most wonderful celebration for little Maddox this past weekend. I feel bad that I haven't wrote about it until now!

In true birthday fashion, we started off the day with some fun fetti pancakes! My family for the most part showed up friday night (except mom and dad), and Daniel's sister and her boyfriend also cam friday for some drinks so we were a bit sleepy and the sugar rush was much needed to start getting ready for Maddox's big day!

We invited everyone to come for lunch, and had a huge BBQ. Maddox was of course spoiled in the present department! So many neat things for kids these days..

We had his baptism at 7:30pm that evening, after everyone had supper and a nap! Maddox played with his water bottle the entire time and didn't make a fuss at all! We kept passing him off, and giving him treats, it was a great evening. Then all our families came over for drinks and some snacks, and after a couple card games we all hit the hay!

It was an amazing day, and I feel so blessed that I was able to take off an entire year of work to spend time with my beautiful baby boy!

But now its time to go back to work, and he has started daycare, and also started getting his molars! OUCH! I'm at my second day of work, and absolutely loving being back! We had a little incident on Tuesday night (which would have been the night before my first day back), and Maddox slept for maaaaybe 2-3 hours. So I was absolutely exhausted!

Oh well, today is new day, and a better day!

Friday things #1

So I've been doing pretty good with the one post a week thing. I figured its time to take it up a step. Eventually I would like to be posting up to five times a week, with 2-3 recipe posts and the rest just what's going on in our lives...
With that said, I'm starting five for Friday posts.. Five random things that are in my head this week..
{one} Well of course, guess who's turning one! It honestly seems like not long ago when my little man was only a newborn. We have had a lot of ups and downs, but I wouldn't change anything in the world! We have a big weekend planned for him. Our friends and family will be coming over Saturday for his birthday party and his baptism is also that same evening. Then the next day our friends son is having his birthday party. So I'm sure we will have lots of fun this weekend!
{two} I've been busy doing some crafts around the house! It's no surprise I'm absolutely addicted to Pinterest. I mean what's there not to love, it's a huge collection of recipes, crafts, information.. Anything you could every possibly need! This project was a little bit frustrating, I couldn't get the frame to hang on the fridge without falling down so I ended up using a command hook. Worked like a charm! I'm using it to write our menu plan, plus anything important.
{three} I'm absolutely loving this nail polish right now! Opi's "you're such a Budapest". Seriously where do they get these names?! I have been getting both my fingers and toes painted with this color for the past month! And I asked my mom to gt it for me for my birthday. She's been really good about picking up nail polish colors I like lately! I got three for Christmas that she picked out and she did such a good job. She picked out a nude, a pink and a dark brown one. Usually the dark brown can be found on my toesies.
{four} it's been raining here for the second day, and I really just wish I could have spent my last week of mat leave outside on the deck. I painted our patio furniture this year and it looks absolutely amazing! You know, we looked at a new house the other day, it had no yard and I couldn't imagine giving all this up. I love our yard so much and I put lot of hard work into it. But the hous was amazing! I would love a kitchen island and to be able to see everything from that island. And two living rooms, with the option of making one into a toy room! And the basement.... Oh the basement... It was man cave material I tell you!
{five} you know, five things are hard to think of, so this is what I've been listening to lately.. I've really been in a 70s kick lately. It's kinda what I grew up listening to. Thanks mom!

Rhubarb Sauce

I've made a couple batches of this sauce already this year, and it's only June! I just actually came in from cutting off the seed pods from my rhubarb so hopefully it keeps growing. Last year was the first year I didn't freeze chopped rhubarb, and I so regretted it. I love rhubarb crisp, and it was a looooong long winter, and even longer since I didn't have my rhubarb!

So this year I plan on freezing lots, as long as my rhubarb cooperates anyway! Or else I will just make lots of this!

This rhubarb sauce is pretty simple, and pretty amazing. You can use it for lots of things. I like mine over vanilla greek yogurt, and sprinkled with homemade granola. You can also eat it warm over ice cream, or add some bbq sauce to it and bbq pork chops or chicken with it. Pretty versatile hey!

Depending on how tart your rhubarb is you can add anywhere from 1 cup of sugar or 2 cups or more I guess, its really up to you. If you aren't eating sugar, add honey. Both work, as long as you cook it long enough that it basically turns into a puree.


Rhubarb Sauce

Prep Time: 30 minutes
Cook Time: 20 minutes total

Ingredients (4 pints)
  • 16 rhubarb stalks, cleaned and chopped into 1/2 inch pieces (or enough for 8 cups)
  • 2 cups sugar (if you want the sauce more tart only add 1 cup)
  • 1 tsp vanilla
Instructions
In a large pot add the chopped and cleaned rhubarb and sugar, let sit for 2 hours.
Once there is liquid in the pot, place over medium high heat and bring to a boil, stirring constantly.
Turn the stove down, and continue boiling for 5 minutes or until the rhubarb is broken down and soft.
Add vanilla and stir.
To can (Hot Pack)
Have sterilized jars and lids ready. Pour very got fruit into hot jars leaving 1/2 inch of headspace. Seal with hot lids. Cool jars on a tea towel over night. The lids should have vacuum sealed. If not, store in refrigerator and use shortly.
- I usually use my canner and process them for 15 minutes.

Busy little bees

We have been busy over here at our home... Maddox has started walking (more like running) and is absoltely into everything. We also have a cute little announcement!

No we aren't expecting baby #2, just in case thats what any of you were thinking! Maddox is turning one on June 22. Which means soon I will be back at work. I can't believe this year has gone by so fast! I feel truly blessed to be able to take off an entire year to watch my little man grow. I realize lots of people don't have that kind of opportunity. It's going to be hard going back to work in the middle of summer, but I am really starting to miss adult social interaction. I'm sure the first few days will be difficult, but we will survive!

We spent a weekend away this past weekend, and had a blast. We left Maddox with my in-laws and went on a shopping trip. I'm so behind on birthday, wedding and shower gifts! I also bought myself a couple things which is nice to do once and awhile, and my birthday is coming up on Thursday so I think its only fair right?!

Anyway, nap time is over!
