Chocolate Banana Zucchini Muffins

I've been on a bit of a muffin kick lately, which is probably because I'm back at work and muffins are an awesome snack or a quick breakfast on the go. I think these muffins are a great way to hide some healthy stuff as well. Shredded zucchini, banana, apple sauce, no oil.. all good healthy stuff! Spread some coconut oil on these babies and you are golden! The freeze really well, and are easy to throw in a lunch kit or thaw out for breakfast.

Chocolate Banana Zucchini Muffins

Prep Time: 10 minutes
Cook Time: 20-25 minutes

Ingredients (one dozen (12))
  • 1 1/4 c. flour (3/4 c. all purpose – 1/2 c. spelt is what I used)
  • 1/4 c. high quality cocoa (it makes a difference. yummm)
  • 3/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 banana, mushed
  • 1/4 c. raw sugar
  • 1/2 c. homemade applesauce
  • 1/2 c. oat milk
  • 1 tsp. vanilla
  • 1 c. shredded zucchini (strain some of the liquid out of the zucchini before adding.)
Instructions
With an oven pre-heated to 350* line or grease a muffin tin. I actually lightly greased the muffin liners since this recipe doesn’t have any oil or butter in it.
Now mix the flour, cinnamon, cocoa, salt, baking powder and baking soda in a medium bowl. Set aside and mix the banana, apple sauce, sugar and oat milk together. Add the vanilla and zucchini and mix until combined.
Now add the flour mixture to the wet ingredients and combine together but do not over mix.
Spoon the batter into the muffin liners/tray to about 3/4 of the way full and bake for 20-25 minutes. A toothpick should come out clean when ready. Allow them to cool and then enjoy!

I think that these would also be good with some chocolate chips or pecans inside. Maybe next time!

Daniel's Family Reunion

Daniel and I took some time off this past week to head up to Candle Lake for his family reunion. They get together every year around the same time to celebrate his Papa's birthday. Its a wonderful reunion, and always full of fun things! This was Maddox's second time being there, but of course he was way more fun this time around! (even if he does have 5 teeth cutting through right now)

We also went fishing and happened to catch some amazing walleye! We caught over 20, but only kept a dozen or so good eating sized ones.

Afternoon Fun

Now that I'm back at work, we try and spend as much time having fun outside as we can after work. We are lucky that we have a huge backyard full of fun things to play with, and although its fun to head to the park once and awhile to play with the other kids I feel like in the evening I just want to keep him to myself!

Yummy Monster Cookies

We've had a couple chilly days this past weekend and it was the most perfect time to get some baking done.

Monster Cookies
Prep Time: 15 minutes
Cook Time: 10-12 minutes

Ingredients (4 dozen cookies)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup butter (1 stick)
  • 1 cup peanut butter
  • 2 tsp vanilla
  • 2 tsp baking soda
  • 3 cups oats
  • 1 cup flour
  • 3 eggs
  • 1 cup M&M's
  • 1 cup Reese Pieces chips
  • 1/2 cup chopped peanuts
Instructions
Preheat oven to 350 F.
Line large cookie sheet with parchment paper.
Combine sugars, peanut butter, and softened butter in a stand mixer and mix on medium until smooth.
Turn to low speed and add in eggs one at a time.
Add in vanilla extract.
Slowly add oats, flour, and baking soda. Beat until combined, dough will start to thicken up.
Mix in candy.
Scoop by heaping tablespoons and place on cookie sheet, make sure to leave at least 3 inches between each cookie.
Bake for 12-14 minutes.
Grab a glass of milk and enjoy!

An Evening a-Fair

We spent an evening with friends at the fair in the next town over. It wasn't a huge fair, but it was big enough that Maddox got lost a couple times. (Not really lost, but the kind of lost where he ducks behind a person or you lose sight of him for 5 seconds and have a heart attack)

Neither Dan or I were brave enough to take Maddox on any rides this time. I think he was too short for the most part anyway. We had so much fun though.

I think he is scheming something here.. he kept running by all the baskets of toys and stealing stuffed animals. We tried to say "No" but he was just having too much fun, so we walked behind him paying for all the stuffed animals he kept taking. Or giving them back.

Fluffy Quiche Muffins

I've been looking for quick and easy recipes lately, things I can throw in a lunch kit for myself, or eat on the way to work. Actually I need to vent here... Mornings UGH!!! My day starts around 5:30am.. my alarm goes off. Sometimes I get out of bed, sometimes I don't. I check my websites, facebook, you know.. all those social media things we all do. Then I hop in the shower and get ready quick, usually bringing Maddox to bed with Daddy for a bit while I get ready in the bedroom. He doesn't usually sleep through me getting in and out of the shower and doing bathroom things, which is tough.. maybe someday though. So after I'm all ready we head to the kitchen to make breakfast, pack lunches, eat, and get out the door.

Thats usually all within an hour. And lets just say I haven't exactly been on time lately.. Its going to take a bit of getting used to I think. Anyway back to my post! These muffins were a great way to use up anything I have left in the fridge! Mushrooms, green pepper, green onions, broccoli, cauliflower, zuchinni, anything but the kitchen sink!

Easy Quiche Muffins

Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients (12 muffins)
    Wet Ingredients
    • 6 Eggs
    • ½ Cup Oil
    Dry Ingredients
    • 1 ½ Cup Flour
    • 1 Tbl. Baking Powder
    • 1 Tea. Italian Seasonings (Basil, Oregano)
    • 1 Tea. Parsley Flakes
    • ¼ Tea. Salt
    • ¼ Tea. Garlic Powder
    Additional Ingredients
    • - should equal about 2 cups of any ingredients you like in your quiche
    • 1/2 Cup Cheddar Cheese, shredded
    • 1/4 cup Green Onions
    • 1/2 cup Mushrooms, chopped
    • 1/2 cup Broccoli, chopped
    • 1/4 cup bacon bits
    Instructions
    In one bowl, mix all of the Dry Ingredients. In a second bowl, mix all of the Additional Ingredients. Set these both aside.
    In a third, larger bowl whisk the eggs. Add the oil and combine well.
    Add in the Dry Ingredients and stir just until moistened. Gently mix in the Additional Ingredients. Do not over-stir.
    Grease muffin cups and fill with the mixture. Bake at 375 degrees for about 20-25 minutes.

    My New Camera Bag

    My camera bag is from Darby Mack and the store on etsy (found here). I spent a lot of time, and I mean A LOT of time, looking at bags. I originally wanted a leather bag from Epiphanie, but I just couldn't put the money into it. This bag was roughly $140, and is a natural material thats is (hopefully) easy to clean.

    One of the drawing cards to this bag for me, was not only that its washable but I can take the camera part out and use the bag as a purse, or put the camera part into a different bag. I wanted something that when we go on trips doesn't scream "Tourist" and "expensive camera here". This bag is washable in cold water and the camera part is waterproof so if I accidently set it in water, its ok.. or, since I now have a busy one year old, a sippy cup leaks, my camera will be protected!

    Maybe some day i will splurge on a super nice camera bag, but for now this bag will do.. besides.. it's CHEVRON!

    Five for Friday #4

    And just like that, it's Five for Friday time again!

    {one} I'm thankful for Kate from The Small Things blog. I've been using her hairstyles all week long. Wednesday I rocked her "how to wear a head band with curls" tutorial and with this heat her "french side braid and messy bun" has been my go to hairstyle! Check out her hair tutorial section.. I have it bookmarked on my phone and visit it daily!

    {two} My lululemon capris have been in my backpack every day, as well as a wicking shirt and my runners. I've started running and walking during my lunch break and I'm feeling great! We have a group of 3 of us that run and 4 of us that walk. We run approximately 5km three days a week and walk about 3km on the days inbetween

    {three} I'm so in love with my camera, I bought it a bag. Its not in yet, but can I still throw some love at it? Its blue and white chevron with a padded water proof section for my camera and other stuff.

    {four} How about my bbq! We've had ridiculous hot weather the past week and we've been bbqing for suppers when we can. I want to start using it more, to grill veggies and stuff as well as meat. Its so easy to cook on the bbq while Maddox is playing outside and I can keep an eye on him! He loves being outside!

    {five}My favorite little man, and my favorite picture of him this week! We had a rough week, Maddox had a low grade fever and last night it peaked and I couldn't get it to come back down! I got cuddles all day today!

    Introducing Rae-Lynn Photography

    I haven't been posting much here lately, because I've been working on a little something...

    This is my new website Rae-Lynn photography. I've been debating starting my own company for a couple months now, well pretty much since Maddox was born, and I finally gave in. I've had family and friends bugging me since I started taking pictures of Maddox to do this, and I guess they were the ones that pushed me to do it.

    I'm super excited to be starting this venture in my life. By no means will I be quitting my day job, but its an opportunity to get my name out there in both graphic design and photography and hopefully some day have my own company. Ideally 5 years from now it would be nice to work from home with my own office.
    And with that being said I will also try to start working on this site a bit more, practicing my photography skills. You may start seeing more write ups on what we do on weekends, and how we spend our time. Anyway thats my exciting news on Home Sweet Mommy for today!

    Whole Grain Buns

    Now that I'm back at work I've been trying to get in the habit of making my own bread and buns. Its easy to whip up a quick sandwich in the morning to take for lunch, or bread for toast in the morning. This recipe makes the perfect amount of bread for our little family!

    Another bonus to this recipe, you can multitask, which is definitely something every mom needs to learn to do and do well! I usually make it in my Kitchen-Aid stand mixer, dumping in ingredients while making supper, or cleaning, or doing laundry.. just dump and walk away for 15 minutes, come back, repeat. There is no hand-kneading this way either. I just kinda roll it into a big ball when its done mixing and set it in a greased bowl to rise. So easy.

    Wholegrain Buns/Bread

    Prep Time: 30 minutes prep, 2.5 hours rising time total
    Cook Time: 20 minutes total
    Keywords: bake

    Ingredients (9 buns, and a loaf of bread OR)
    • 1 1/2 cups warm water
    • 1/4 cup sugar
    • 1/4 cup oil
    • 1 tbsp. quick yeast
    • 1 egg
    • 1/2 tsp. salt
    • 2 cups whole grain flour
    • 1 ½ cup white flour (plus ¼ cup more added in bits until dough is correct)
    Instructions
    Mix together water, sugar, oil, yeast, eggs.
    Add the whole grain flour and mix well. Add in salt and continue to add flour 1/2 cup at a time beating well in between.
    Rise 20 mins in oiled bowl, punch down and repeat twice.
    Shape into buns or bread, rise until doubled.
    Bake 350F for 18-20 mins.

    Friday Things #3

    Wow, another week gone already!

    It was a long weekend here for us. Saturday we tried to have a relaxing day at home, but we ended up having people over which is even more fun! And there was a football game on to boot! Saturday we drove up to my Grandma's cabin where my Mom's side was hanging out and spent some much needed time at the beach! Maddox loved the water! Then monday we were up at the lake visiting with my in-laws friends from Portland. They had a beer gardens and activities set up for everyone since it was Canada Day, and even though we skippped out on the fireworks we still had tons of fun! I have never seen Maddox so happy! He was in love with the live music and entertainment.

    Maddox had his one year needles on Wednesday, and they really seemed to be bugging him and we spent most of the day sleeping and cuddling. Yes I took a day off work to cuddle with Maddox..

    My first photoshoot was Thursday night, and we had such a blast! The in-laws friends wanted some pictures "out on the farm".

    {one} Coffee, coffee and more coffee. I'm currently in love with Van Houtte Vanilla Hazelnut made in my keurig. It's pretty much what got me through the week...

    {two} Children's tylenol. Not for me, but for Maddox. I don't think anyone would have slept this week without it.. Maddox's needles, his teeth, his cold.. it was a cure all for sure!

    {three} Adobe Photoshop. I've been working on a new blog design for my new website - Rae-Lynn Photogprahy. Interesting fact of the day - Rae was my nickname is highschool..
    {four} My family. I had a great weekend in the sun, at the beach and just relaxing with them!

    {five} I'm on an oldies music kick again.. someone help!
