Quick and Simple Fresh Bruschetta

Now that it's summer and we will be moving out to our camping spot in just over a week, I've been looking for some quick and easy recipes that may be doable in the camper or on the bbq. There is no reason you couldn't toast the bread for a quick and simple bruschetta on the bbq or even on an open flame. And all the ingredients are fresh and simple and the taste is just so pure. There is nothing I love more than using local ingredients as well, so we are lucky there is a few local greenhouses that sell produce to our grocery store. 

I should mention, there really isn't much of a recipe for this bruschetta, and the ingredients I use change from time to time. I've also added things like shrimp, or a poached egg on top to make it a meal for myself.

Quick and Simple Bruschetta

Ingredients (1-2 servings)
  • 1 cup sliced cherry tomoatoes
  • 1-2 garlic cloves, minced
  • salt and pepper
  • 1 tbsp oil (a good quality extra virgin olive oil works best)
  • a small bit of parsley, or basil, or oregano
  • balsamic vinegar
  • crusty bread or baguette
Place the tomatoes, oil, parsley and garlic in a bowl. Lightly toss to coat.
Slice bread and lightly toast in oven under broiler until good and crusty.
Spoon mixture over bread, drizzle with balsamic vinegar and add salt and pepper to taste.
